GAJAR KA HALWA… A Winter Treat of Carrots
How about a sweet treat in a cold foggy evening? A hot plate of desert will be a perfect mood elevator. No eastern cuisine is considered complete without hot, crunchy and juicy Gajjar ka Halwa. It is a must for all formal course of meal; specially during winters.
It’s basically a carrot based eastern pudding which is very nutritious and healthy. It’s a rich source of eyesight improving beta carotene (Vitamin A), Vitamins (B complex, K), Potassium, Calcium, Sugars, Fiber, Detoxifying and Antioxidant agents. All these nutrition’s increase energy levels, make bones strong, improve immunity and maintain a good health.

| Sugar | 250 gm |
| Khoya (reduced dry-milk) | 250 gm |
| Desi Ghee/ Butter | 200 gm |
| Milk | 250 ml |
| Almonds | 200 gm |
| Pistachio | 200 gm |
| Cardamon seeds | 1 tea spoon |
| Silver paper (Warq) | 12 |
Recipe:
- Peel and grate carrots with a medium fine grater.
- Pour milk in a non-sticking pan along with grated carrots. Stir well at medium flame till milk dries and carrots become tender.
- Now add butter, cardamon seeds and sugar to it.
- Stir and cook it, till oil gets separated.
- Add khoya (reduced dry-milk); mix and cook for few minutes till the ingredients gets thick.
- Now garnish it with chopped almonds, pistachio, and decorate it with silver paper.
A nutritious mouthwatering desert is ready for the feast, enjoy it with friends and family.
