SAVIYAAN, a sweet delicacy
If you have a sweet tooth and you haven’t tried traditional ,delicious and healthy SAVIYAAN (vermicelli) then you’ve missed the flavor and texture of sweetness. It is one of the popular, authentic traditional dish that express love, our history and culture. It is an obligatory sweet dish on all festive occasions, as no Eastern formal food cuisine is complete without it.
Vermicelli is made from whole wheat, flour or semolina. Vermicelli is either thick or thin long strand, high in calories and rich source of carbohydrates; making it a nutritious food for everyone. You can have it in breakfast or with a hot cup of evening tea with your loved ones.
INGREDIENTS
| Vermicelli | 250 gms |
| Sugar | 200 gms |
| Butter | 240 ml (1 cup) |
| Milk | 360 ml (1.5 cup) |
| Green Cardamom | 3 |
| Almonds | Blanched & cut, 1 tablespoon |
| Pistachio | Cut, 1 tablespoon |
| Raisins | 1 tablespoon |
| Purified butter | 1 tablespoon (for frying nuts) |

METHOD
- Put 1 tablespoon purified butter in non-stick pan and fry almonds, pistachio and raisins, for 1 minute, and then take them out in a plate.
- Heat butter on medium flame; roasting cardamom and vermicelli for 2 to 3 minutes until golden brown.
- Now we will add milk to vermicelli, but REMEMBER it will be added in three portions to maximize flavor and crunchy texture and you need to mix it continuously.
- Add 1 cup (240ml) very gradually to golden cooked vermicelli and cook it on low flame for 2 to 3 minutes until it gets thick.
- Add half cup (120 ml) again and sugar 200 gms, keep mixing till sugar melts. Now cover it with lid and simmer for 5 minutes, it will be thick again.
- Sprinkle all the nuts on vermicelli, mix and serve hot.
